So I am planning to go to japan again to snowboard, this time solo(im 27yo).

Which resorts would be ideal for this, I'm thinking myoko kogen for 4-5 days then somewhere else.
I would be staying in hostels to meet some new people etc.

(I also already went to shiga kogen this year)
    Hakuba?

Also do any of the hostels in these areas have an onsen, or one nearby?

    Cheers guys

There's about 500 resorts to pick from. If you can't find a nearby onsen, you're in the wrong country ;)

Powderhounds have a nice summary if you're trying to narrow things down.

Hakuba would tick most of your boxes. Find a good lodge and you'll have fun for 10 days easy.

If you are serious about riding stay with Nick at the Powder Lodge. If its more Apres and riding try Monkey Rider.

10 days - stay in one place. Hakuba and Myoko the most straightforward choices.
Myoko Powder Hostel and Japow House are your two best hostel choices in Myoko. Funky Monkey is good too but further down the hill. They don't have onsen but there's ones very close.
A couple of hotels in Myoko offering shared rooms now but I tend not to recommend either of them. If interested I can organise a single room at an Akakura hotel with onsen for you - 8,400 a night (if staying 10 nights).

I too am travelling solo to Japan in Feb with the plan to spend 5-7 days in Saporro, Otaru and Hakodate. Any recommendations on where to stay and what to do here would be fantastic. This will be my first time snowboarding too.

If you are new to snowboarding one very easy option would be to stay in Sapporo, and get the ski bus to Sapporo Tiene. They do packages that will cover your bus fare//lift pass which is pretty reasonable. Then you get the upside of staying in Sapporo, which is relatively cheap to stay at, with loads of great food and night time options. https://sapporo-teine.com/snow/lang/en/access.html

If you stay in Otaru then Kiroro is the obvious place to snowboard. There is a bus from Otaru that costs 900 yen. https://www.kiroro.co.jp/access-winter/

She'll be there during snow festival. So accomodation may be expensive

Good point, didn't think of that. Prices drop back down to normal from the 12th Feb. I know that because we will be in Sapporo from the 11th.

We used Airbnb during the snow festival week.
