we are travelling Vic to SA 10th-12th October, our 7yo. has never seen snow. Once the resorts close is there still access to pockets of snow or are roads/access closed? Sorry, complete novices here.

Yes there will be still plenty of snow to play on, and better yet no resort entry costs or parking restrictions. This year is probably the best in recent memory to do some post season snow play.

The road up to Charlotte Pass should (emphasise should) be open by then. It should at least be open to Spencers Creek. There will be snow beside the road. There may be snow at Dead Horse Gap on the Alpine Way. If there isn't and if the chairlift is running (it may be closed for maintenance) you can ride to the top of Thredbo where there will definitely be snow.

May be a prohibitively long detour for the OP.
