Given the ads for most venues, begging for staff, I think you will see quite a few shortcuts being taken (pre prep etc), and generally lower standards everywhere IMO. Unless you are prepared to pay double, you would have a hard time attracting a good chef to the region at the moment.

Need a program to get chefs hooked on skiing again, to replenish the stock of people willing to work and not make any money, just to feed the addiction. The time tested business model?

Thats great for when you're sitting on your arse knocking a few cold ones back, but is it appropriate for when you are going to be spending the arvo engaging in a physically demanding activity like skiing/snowboarding?
If KT want to make more money. Fair play to them. The place will still be rammed on a sunny day.

When was the last time you were there? Every time i've been there over the last 5 years, its just been full of people smashing bowls of pasta, goulash, burgers etc.

In the near on 100 occasions i've been in there in that time, i haven't seen anything approaching loose behaviour

What time are you going there? I love it for lunch with the kids early and beers with the boys later. In my experience the mood changes around 130, give or take depending on weather…!

Never ever.
Pretty tough traverse to ski HN from black Sallies after a few beers.

FWIW I’m not a fan of the changed menu at BS but this year isn’t the year to try something fancy. Get a chef that is reliable and produce what you can to a level.

No point having a fancy menu and producing inconsistent rubbish. If the staff aren’t there don’t try.

You don't need a chef to serve the new Black Sallee's Menu.

I don't blame KT for how small the menu selections are, not being able to get staff is a nation-wide problem and they would need to be able to consistently get food out to the customers

I do, however, blame them for the ridiculous prices they're charging. I blame them for changing the kransky and sauerkraut to generic hot dogs to save money. It's also not difficult to quickly and consistently make burgers, or nachos. Their menu choices are piss-poor for no reason.

Which is why I don't go there. Spend a little bit more and you can get something 10x better at the Burger Bar or even the Thredbo pub.

The old Black Sallees charged Thredbo prices. The new Black Sallees looks like KT is taking the piss. There's a very big difference between charging Thredbo prices and trying to rip people off.
Burger bar not opened for lunch midweek. They take the nsw dine vouchers.
Didn't bother with food purchases last week (except for one off doughnuts at the end of the day).
Ate breakfasts at accommodation, then would go back to room and cook up premade cheese/bacon toasties.
Dinner, like LMB, would be home cooked,vacuum packed frozen dinners.
Also took tiny coffee maker and milk frother for my addiction.
Would hate to think how much 6 days and 5 nights would cost on the hill for food and drink.
Did splurge at hungry jacks on the way home and blew $2 on their bbq cheeseburger and $2 medium fries from their penny pincher menu.
Did enjoy the one hour lunch break back in the room having lunch and resting the feet .

You’re obviously able to avoid calling it a day when you go back to your accommodation at lunchtime. Me not so much.

The new Black Sallees menu is very disappointing. I thought that the reductions at Eagle's Nest were bad but Black Sallees is a new low. Hopefully not a sign of things to come this season at Kareela.

I think pretty much for ever those (Eagles Nest, Kareela) were the only places to get a restaurant meal, but for nice well prepared food Black Sallees was the place. I’d go other places but that was my favourite.

Is it a poor reflection on me to say that the Captain's version of Black Sallees was one of the reasons that I kept coming back to Thredbo?
Nah, kind of fair

Whilst the shenanigans at the bar never did anything for me the chicken wings were the bomb

Thanks for the quick reply, although I meant the Merritts Mountain House menu - unless its the same as Black Sallees?

I don’t think they have one? From memory I think usually there’s just signs pegged up on a line across the kitchen with different hot food options, and the cold / ambient food options are just on display in the cafeteria walk through line?
Haven’t been yet this year though so could be wrong.

I was at Kareela for Lunch yesterday. Like the rest of the on mountain offerings, they have a mini menu this year (which I have attached pics of below).

My group had a booking for 11:30, however we weren't seated till 11:45 despite getting there just before 11:30. The service seemed to have a few teething problems, but I'm sure this will be sorted out as the staff get used to things. They seemed to take a limited number of walk ins, but it was mostly booked guests.

The food was good as usual, despite the mini menu. They have a special on this week, which is a roast Lamb Shoulder. Mum and I got the Lamb to share and we thoroughly enjoyed it, although it was a bit expensive at over $100. The jägerschnitzel and apfelstrudel also looked good. Sadly no goulash or veal schnitzel this year with the reduced menu, those were favourites of mine.

Glad to see the pork knuck is still there albeit for $20 more than last year I think.

It’s always been overpriced, and average, the whole region. Kind of like Margaret River 20 years ago, claiming five stars, delivering three. It has been improving a little in recent years, have they got over Chorizo yet?

Seems like everyone’s mad at the smaller menus but as someone that doesn’t eat much meat and can’t eat mushrooms I’m just stoked that:
a) Black Sallees has buffalo cauliflower wings (a fave of mine- sometimes even better than the chicken option, no bones to deal with)
b) Kareela has an eggplant schnitzel

For context, if I don’t feel like eating meat in Thredbo my usual (mushroom free) options consist of potatoes (mostly fried) or a soup (that’s not a meal). Mushroom sneaks into everything… So yeah, nice to have some extra options… Jury’s out as to if they’ll be any good… Will report back early Aug :D

They luckily still have some German beer options and the one on tap was nice. Little bit of a different vibe without the captain but still a little better offering then merrits

That's a carbon copy of my experience. Hope things turn around as I have an attachment to the place and they can find a charismatic manager to run the place.

Ok, last of my immediate post-trip reminiscing posts before I settle back into the reality of what I am supposed to be doing behind this desk.....

So over a week and a half, covered most of the restaurants in the village and on the mountain I think. As a general statement, most places are actually doing things pretty well. It's very expensive and nothing will really blow your mind, but in the main, they're doing a pretty good job of delivering what they say they will and you should be expecting those 'premium' prices by now I think. The main impact of short staffing I found was the difficulty in getting bookings - I booked weeks in advance and even then could only get Kareela one day out of 10 and couldn't get into Candlelight or T-Bar at all. Then you would go to many of those restaurants and they would not be full (Denman had less than half the tables available for dinner for eg) so it must be really frustrating for the managers of those places too.

Quick restaurant summary:

Village

(1) Denman - our favourite. We ate here a few times. Everything was really well done and we like the setting. Fish was a standout in a town where it is hard to find fresh and/or healthy options! Filet Mignon went down very well. Desserts great. Longer and more diverse menu than most this year.

(2) Bernti's - steak was excellent, as it should be at $80!! Wife looking for something a bit healthier went for vegetarian fried rice which was really more like just rice and pretty disappointing. Moved downstairs from Zacks grill due to Covid needing to shut that kitchen, so limited experience and won't hold too much against them. Have had great meals here in previous years.

(3) Crackenback Farm - don't forget about this place if you can manage the drive. Food is really excellent. Pork Belly was amazing.

(4) Sante - middle son (quite the aficionado) rated the ribs here as the best dish of the whole trip. They really were very good. The steak was also a great piece of meat, cooked just as ordered. Again, expectations are very high for $80 steaks though..... service a bit all over the place here but I think just inexperienced/short staffed. They were nice and well intentioned, recognised a couple of boo boos and gave the kids free dessert so overall we left happy.

(5) Burger Bar - love the vibe and a much better price point than most. The salad and sides all good but unfortunately the burgers were pretty average. Not terrible, just dry patties and not quite meeting expectations for a burger specialist. I'm prepared to give it another go next time because it shows so much promise. And it's still much better than the pub of course...

(6) Pub - avoid unless you can't get in anywhere else, but you already knew that.

(7) Mad Mexican at Ullr- I really enjoyed this, I think most who like Mexican would too. Only downside was that our waiter had a quite different interpretation of what is spicy than our U10 kids. Made up for it with the Churros though!

Mountain

(8) Kareela - I just love this place. Family wouldn't cooperate with the ordering so forced to man up and attack the pork knuckle solo. Unfortunately led to a lot of wastage but it really is excellent. Every other dish went down just as well. Must book I think.

(9) Eagles Nest - extremely limited menu (two soups, two toasties) but came out fine. Hot chocolates excellent for kids and setting is also nice with the fireplace on top of the mountain. Only a 10 min wait (inside and warm) for a table without a booking.

(10) FF food court - avoid unless you can't get someone in your party any higher up the mountain, but you already knew that.

(11) Merritts - actually did a decent job. Watermelon cups and wraps were simple but quite decent and a fresh necessity for us after so much fried food everywhere. Crowds are out of control up here.

(12) Avalanche - great pies and burgers!

Hope that helps someone who needs to make some bookings for later in the season!
