My old time memory (20 years) I just know that the mid point on your binding needs to match the mid point of your boot. Usually indicated with an arrow.
Or in my case (old boots that happen to be in my apartment) a line and an A.

What brand bindings, how are they mounted? Into a plate, or direct onto the skis. Did the store have your boot length? Oh and are they adjustable or fixed.
Probably best to start there.
Skis purchased from Powder7. They have a pretty robust process to ensure mounting is fine. I'm very confident in that portion. They had our boot length (305mm) and mounted directly.
Tyrolia Attack 13s (hence that guide I linked to). Boots clip in fine and forward pressure indicator is pretty close to middle when clipped in (one notch either way is either too far forward or too far back).
AFDs are adjusted to be grippy but still let a business card in or out.
I’m 90% certain it’s all good.

All the Tyrollia bindings I ever mounted were flush to the housing for forward pressure. None had a toe height adjustment. If in doubt any ski so or hire place will check it out for you.
Thanks @Telemark Phat These have a tongue thing with 6 notches, goal is to have it as close to the middle - ie between 3 and 4 as possible. These don't have toe height adjustment, but do have a AFD height adjust which is just the AFD on an angled rail.
DINs are as simple as can be.
That's the problem. After online conversation they were non-committal on if they can or not. (I think they are worried about indemnity rather than can do it).
Thanks again everyone. I'm hopeful one of the 3 rental places in the village will be able to run an eye over, but also fairly confident I've got it right now.
@Normo had some skis online, pretty sure powder 7, and the bindings were off and had to be remounted. However, I think he has bought more from there, and others have as well whichhave been good. Best to get them checked if you can
My purchases were from Level 9. Great skis and super fast delivery on both occasions but the first time the bindings were set for smaller boots than I had quoted. ( thanks to Adis for sorting them out!)
The second time purchase, the fit was perfect. Making sure you actually measure your boot length right is the critical factor. Don't just quote your boot size!

As per the above, the plan is to try to get them checked out.
I also managed to find the Elan tech manual (part of the head/tyrolia group) which has the adjustment instructions for these bindings on page 52.
